any ideas that i can use during the first week of helmets only?

Do what you normally do but slow things down, don't go to the ground and take them step by step. This is a great opportunity to teach "how" to tackle. The ball carrier needs to allow the tackle to happen.

Totally agree with DW. Do what you are going to do during practice when you have the pads on. Slow it down and work form. The kids will know what you are doing during practice and practice will clip along at a much better pace.
