I use my pressure cooker mostly for goat and oxtails. Never tried making stock in it. It seems to make sense that it would work though. Guess not.

Maybe it's me, some people swear by the Pressure Cooker. I love red beans & rice. Tried it a few times in the PC with mediocre results. Enamel pot in the oven for 4 hours & we are talking Cajun heaven. I do use smoked turkey instead of ham hocks but it does come real good. I use the Camilla  brand Beans & they are simply perfect.

I haven't had good Oxtails in a while. Did have some great lamb shanks the other night.

She uses the pc more than I do. I'm with you, slow cook it for best results. I am a big fan of using smoked turkey wings in stuff like beans and greens.

Yeah, I think you get the same flavor profiles, & little less greasy. Not to say I don't like ham hocks.

My Mother would would Manesta, which is escarole with smoked neck bones. It is poor people food but so damn good. Today it's gourmet at 20 bucks a plate.

Seasonal cooking is really back in vogue. that's the whole Farm to Table movement. We were ahead of the curve, just didn't know it. In Italy they shop every day, so it's all what's fresh & local.

Im Italian, so red sauce is very important to me... my wife (who does most of the cooking) doesn't like red sauce.  Its annoying watching her eat ravioli with just a tiny bit of the corner dipped in sauce on the side.  Anyways, she is a proponent of jarred sauce.  And I just kind of deal with it.  Me and my oldest, our favorite dish is Lasagna, my old man makes a bad ass lasagna with his homemade sauce.  So this year for Christmas, me and him are going to make a big ol stock pot of the good sauce.  But I digress!  Flashback to a few Saturdays ago, my wife and I are at my kids schools main fundraiser, which is a big auction/raffle/silent auction event.  One of the silent auction items is a pan of homemade lasagna, everything is made from scratch, the noodles, the sauce, the sausage... everything.  I figure, after years of lightly jarred sauced lasagna made by my wife, I could splurge the $60 or $80 bucks this pan would cost me, I mean its for a good cause right? 

So anyways, after work today, I am going to pick up my $180 pan of lasagna for Thanksgiving dinner.  And I could not be more excited.

Have you ever had Lasagna topped with Bechemel. That's a Northern Italian thing, awesome. Any of the layered dishes really need to set. lasagna, mousaka, even canaloni's.

Im not quite that cultured :)  I have had a good béchamel before though.  I gotta focus on the conquering the red sauce issues first.  Financially, we are to the point where we don't have to get whatever jar is on sale anymore!  I am turning into a bit of a sauce snob now though.  I was at a different fundraiser this past weekend and had rice balls in a vodka sauce... damn near made me sterile it was so good.
