I can discuss my recipe for lemon chicken.

Basically, I grill chicken and then squirt lemon juice from one of those little plastic lemons onto it.

OK, that's pretty much the whole thing, except for the salt and the pepper.

It's amazing the things people can swallow!

Some people eat as mere substance, other's find the joy in a really fine meal. We can not forget Michael's lemon chicken is a step up from IHOP.

some of the best meatballs I have ever had, were a accident. Friend brought over ground "bison" on accident, I told him I was low on ground lamb he grabbed wrong pack. The result was 1/3 lamb, 1/3 pork, 1/3 bison parsley and shredded Parmesan stuffed....DELICIOUS!

As far as Bison burgers go, the simple beef marinade by Lawrys keeps it simple and flavorful. Marinate and drain...Only did this once, but it was good. Problem with bison is people tend to "over" spice it and it really gets over spiced quickly and over cooked. Shoot for rare and you will get medium, shoot for medium and you will get a dried out grey over cooked paper weight

When I lived in Kansas I practically lived off of bison(there are no actual buffalo in the US, its bison).  Best steaks I ever had but you better eat it rare or it is dry. Super lean like venison. Had it in stew/chili as well. Ate ostrich in Ks also. A buddy raised them.

venison chili won the local Orange County chili contest awhile back, that was goooood! Im not a Bison expert by any means, BUT your right it cooks very very fast, and will dry out and become tough in a heart beat. The other thing I noticed is same amount of seasoning over powers very quickly. Maybe there is no fat run off so everything stays in/on it??? Sounds like a good guess to me
