some of the best meatballs I have ever had, were a accident. Friend brought over ground "bison" on accident, I told him I was low on ground lamb he grabbed wrong pack. The result was 1/3 lamb, 1/3 pork, 1/3 bison parsley and shredded Parmesan stuffed....DELICIOUS!
As far as Bison burgers go, the simple beef marinade by Lawrys keeps it simple and flavorful. Marinate and drain...Only did this once, but it was good. Problem with bison is people tend to "over" spice it and it really gets over spiced quickly and over cooked. Shoot for rare and you will get medium, shoot for medium and you will get a dried out grey over cooked paper weight
