1.  Do you have the patience to coach 5 year old kids?  I know I don't.

2.  Are you the kind of guy who can just shut up and do what you're told?  I know I can't.

For me, the decision would be simple - forget the 5 year old team.  As for the AC job - you should give some thought to your own limitations.  I have a hard time minding my own business.  That means I either have to be on a staff that has a clue, or have enough authority to make changes and be heard.

Me in your shoes - I have a chat with the inexperienced HC.  And I describe that situation last year, and flat out tell him you will respect his authority, but you have zero patience for willful cluelessness.  If you're kicking his ass with 7 stiffs, then your expectation would be that he's going to come to you and ask what he needs to do to stop getting his ass kicked, not hamstring you to cover up his own foolishness.  Be a prick up front, then at least he can make a decision based on worst case scenario with you.

I have two high school aged boys and one recent graduate.  I would take the 5-year olds!

I have coached HS kids in basketball, but not recently, it was in my early 20's.  I have tutored HS kids even as recently as 5 years ago, so I have worked with that age group.

I just don't have the patience for the smaller kids.  I can deal with the BS from HS kids.  I just don't have the personality to deal with the younger kids.  So it's not just patience, but that's a big part of it.  It's just a different level of relating.

Coaching the young ones is truly an eye opener.  My daughter is playing basketball this season, her first ever competitive sport.  She actually said she wouldn't play unless I coached her.  :-[  So I am coaching six 1st and 2nd grade girls that have never played basketball before.  This is in addition to coaching my son's 3rd and 4th grade team.

Coaching the younger girls has actually been a pretty rewarding experience for me and subsequently for the older boys that I am coaching.  With the girls you really have to water things down and teach the sport in it's most basic and raw form.  It's a joy and a challenge at the same time.  But it has gotten me taking the same approach on some levels with my boys team.  We work the heck out of fundamentals and basics. 

Also, in the boys league there are a few teams that put way too much focus on winning as opposed to teaching the entire team the game of basketball.  1-2 kids dominating the ball and scoring every basket.  Coaching the younger girls has gotten me in the mindset to avoid the drama and keep it focused on fun and fundamentals.  Do that and the wins eventually come along.  Both teams are having a ton of fun and all 14 players between the two teams have become pretty darn decent basketball players in the process.

Coaching the young ones is a chore in so many ways, but the rewards can be great.

I have coached both Flag(5/6) and Tackle(7/8/9).

One thing to keep in mind is they are too completely different games that really require different sets of skills to be successful, to me then only thing they have in common is you are using a football, especially at the youngest age levels were passing is very limited. So things do have a bit of a cross over: Hitting the hole hard with the Football, carrying out fakes well...but generally you are not allowed to "run over" a defender but even a skill such as passing and receiving doesn't translate well to the Tackle game once you put the gear on.

Also there are various forms of Flag and I would assume 8 man allows for some form of blocking and a free rush as well (the free rush makes it difficult for your misdirection plays to develop).

I had a couple of options for my 7 Year Old last season and choose Tackle over 8 Man Flag. We will do 5 Man Flag this spring which is a game I enjoy teaching (not as much as tackle).
